How soon before a trip do you pack? Do you over/underpack, or do pack just enough?

I have a tendency to overpack, and that is usually because once I pack everything I intended to, my anxiety kicks in, and I end up on the "what if" spiral and unfortunately, I end up packing more..
This has probably been the root cause of me getting out late on trips with my husband and family..
And to make matters worse, I will probably end up wearing about half the stuff I packed..
And s for how soon before a trip, I'd like to get as much packing done as possible, and I usually try to enlist my husband for help, but it still ends up coming down to me, and he'll have to get whatever it was I missed when he can..
